My favorite meal to make is BBQ pulled-pork sandwiches because it's sooo easy, and everyone loves it. You just put your pork loin in your crock pot in the morning, cover it with your favorite bbq sauce, then cook all day! Serve on buns.

My favorite meal to make recently has been fajita soup. I liked to make it so much my husband asked that I change it up a little. ;) But it's very easy and super tasty.

Spaghetti Casserole
From LaGrange, Georgia, Kim Rocker writes, “This is an easy dish to prepare ahead of time, refrigerate and bake just before company arrives.” Canned soup makes this casserole creamy but it still cuts well for serving.
SERVINGS: 12
CATEGORY: Main Dish
METHOD: Freezer
TIME: Prep: 20 min. Bake: 55 min.
Ingredients:
1 package (16 ounces) angel hair pasta
1-1/2 pounds ground beef
1 jar (26 ounces) spaghetti sauce
2 cans (8 ounces each) tomato sauce
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup (8 ounces) sour cream
2 cups (8 ounces) shredded Colby-Monterey Jack cheese
Directions:
Cook pasta according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in spaghetti sauce and tomato sauce. Remove from the heat. Drain pasta. Combine soup and sour cream. In two 8-in. square baking dishes, layer half of the meat sauce, pasta, soup mixture and cheese. Repeat layers. Cover and freeze one casserole for up to 3 months. Cover and bake the remaining casserole at 350° for 55-65 minutes or until cheese is melted. To use frozen casserole: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Bake as directed. Yield: 2 casseroles (6 servings each).

Impossible Cheeseburger Pie
1 lb lean ground beef
1 large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick® mix
1 cup milk
2 eggs

About Concordance™
Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.
In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.
Bake about 25 minutes or until knife inserted in center comes out clean.

My favorite recipe is Italian Sausage in a cream sauce.
Cut up one package of Italian Sausage
Brown in 2tbs Olive Oil in a large pot
Add 3-4 Chopped garlic cloves
Add fresh chopped parsley, basil and oregano just before sausage is almost done.
Add two Large Cans of Crushed Tomatoes
Fill one can with water and add
Cook until reduced. About 1 hr.
Add heavy cream to desired consistency and let reduce about 30 min.
Serve with Rigatoni or past of choice!!!

My favorite recipe is ranch turkey burgers. One pound ground turkey mixed with one packet of hidden valley ranch dip (dry) and 1 cup shredded chedder cheese and 1/2 cup sour cream. Mix well, add salt and pepper to taste and form into patties. Grill until completely cooked, turning once. Serve on whole wheat buns with lettuce and tomato slices…yum!

And my favorite thing in the world is to bake. I have many many good recipes for you. Cookies, pies, brownies, cakes…yum. I'll just give you one recipe on the top of my head….
Oven Baked Teriyaki Chicken Thighs (adapted from AllRecipes.com)
1 tablespoon cornstarch
1 tablespoon cold water
1/2 cup white sugar
1/2 cup soy sauce
1/4 cup rice wine vinegar
2 cloves garlic, minced
1/4 teaspoon ground black pepper
12 skinless chicken thighs
1. In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.
2. Preheat oven to 425 degrees F (220 degrees C).
3. Using scissors, remove any pieces of fat from each chicken thigh. Place chicken pieces in a 9×13 inch baking dish sprayed with Pam cooking spray. Pour 1/2 half of the sauce over the chicken, brushing each piece so it is coated.
4. Bake in the preheated oven for 30 minutes. Turn pieces over, pour on remaining sauce, and bake for an additional 30 minutes, or until chicken juices run clear.

I could give you loads of recipes, but the one that has been an easy hit for everyone I know is italian chicken. Super easy.
Put boneless, Skinless chicken breast in the bottom of a baking pan. In a bowl combine one large onion and sliced mushrooms (amount depends on how much you like of both of these two items) add 1 tbsp worcestershire and 1/2 bottle of italian dressing. Bake at 350 until chicken is cooked through. Super yum, super easy. Always a good combination!

My new favorite meals are the meals that come pre-measured (in seasoning aisle, McCormick brand) you just add meat and veggies (and sometimes fruit) one of my favs is the Apple and Sage Pork Chops (it only takes one pan and is SO EASY!)

As for a recipe… I don't cook very good dinners (just ask my kids!) but I can BAKE! And who doesn't like dessert first?? So here is one of my favorite baked recipes (from my Mom who passed away, but not before sharing these awesome brownies with me!)
Lenore's Chocolate Peanut Butter Brownies
1/2 c butter or marg.
1/2 c. peanut butter
2 c. sugar
4 eggs, beaten
4 squares unsweetened chocolate, melted
1 c. flour
1 tsp. baking powder (not soda!)
1/4 tsp salt
Powdered sugar
Cream butter and peanut butter with sugar. Add beaten eggs, melted chocolate & flour which has been sifted with baking powder & salt (yes, old recipes say 'sift'!!). Spread in greased 13×9 pan. Bake @ 350 degrees for 35 mins. Check to see if done with toothpick.
BEST part of recipe: When cooled, cut into squares and dip all of brownie in powdered sugar before serving. (At my house, if I ever skipped this part, I would be shot)

Ohhh I would love love love JUHALA (our last name, of course, in a framed print. I must say, though, that I love the Christmas Alphabet "JOY" prints. So creative! I love taking the everyday and turning it into something extraordinary. And with 4 hungry kids I don't have time to write a recipe out for you, but our FAVORITE snickerdoodles are at juhalaadventures.blogspot.com! To make them with regular ol' flour you can just use 2 cups of flour and omit the xanthan gum. Maybe I'll link to them tomorrow :)

the framed i love you jumped out at me, easy to read, but so pretty
my kids are happiest when i keep it simple. we aren't monring people, so we like buttermilk pancakes and sausage for dinner. i usually top them with fruit, or serve fruit and yogurt parfaits on the side. somehow a dollop of whipped cream on top makes it all a little special.

For a recipe… here is one very easy… Macaroni and cheese!!! (LOVE IT)
Ingredients:
8 ounces macaroni noodles
2 cups sharp cheddar cheese (grated)
8 ounces sour cream
1 egg, beaten
salt and pepper to taste
Preheat oven to 350 degrees.
Prepare macaroni by following package directions. Drain macaroni noodles and salt and pepper to taste.
In a large mixing bowl, combine cheddar cheese, cottage cheese, sour cream, egg and salt to taste. Stir well. Gently stir in cooked macaroni.
Lightly grease a 2 quart baking dish. Carefully pour the macaroni and cheese mixture into the baking dish.
Bake uncovered for 45 minutes. Remove from oven and let sit for 15-20 minutes before spooning into your plate.
Enjoy!!

as for the recipe. It's a super easy one!!
equal parts of: Apricot Jam and Catalina dressing (maybe approx 1-2 C of each?)
plus, one packet of dry onion soup mix.
Mix together
pour over chicken and bake until done.
Serve over rice

line sheet of pastry in a pie or quiche dish…spray oil first so it doesn't stick
*pkt frozen spinach defrosted and squeeze excess water out
*1 small tub light sour cream
*8 eggs
*cup low fat cheese
*half chopped onion
*teaspoon minced garlic
Mix it all up and top with crumbled fetta cheese
cook until just beginning to brown then sit with oven turned off for 10 minutes
serve with a greek salad…
that my friend is my favourite dinner.

It was so hard to decide what recipe to share….so here is dinner and dessert, Southern Style! Enjoy!
Dinner: Popyseed Chicken
2 or 3 chicken breasts, boiled and cut in small pieces
1 16 oz sour cream
2 cans cream of chicken
2 tbls of poppyseeds (I don't measure – I just shake a ton in)
Ritz crackers
1 stick of butter
Mix the first 4 ingredients and put in a baking dish. Cover with crushed up ritz crackers. Melt a stick of butter and pour on top. Bake for 20-30 minutes at 350.
*You may serve over rice if you like.
Dessert:
Red Velvet Brownies with White Chocolate Frost.
1/2 cup butter, at room temperature
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla extract
1 1/4 cups all purpose flour
1/4 teaspoon salt
3 tablespoons cocoa powder
2 tablespoons red food coloring
2/3 cups chocolate chips (optional)
Preheat oven to 350.
Butter and flour an 8 x 8 cake pan.
In a small bowl, combine cocoa powder, red food coloring, and 1 teaspoon vanilla to create a paste.
In the bowl of an electric mixer, cream butter and sugar until fluffy. Add eggs one at a time, then add remaining teaspoon of vanilla. With the mixer on medium speed, add in cocoa powder mixture. Beat until batter is completely red. (If at this time your batter is NOT red, you can add a little more food coloring if desired. Color will depend on brand.) Add flour and salt, mixing until just combined. Fold in chocolate chips.
Spread in the 8 x 8 pan. Bake for 25-30 minutes, or until toothpick inserted in center comes out clean. Let cool completely before frosting.
White Chocolate Frosting
1 stick of butter, at room temperature
2 1/2 cups powdered sugar
1 teaspoon vanilla extract
4 ounces white chocolate, melted
1-2 tablespoons milk (or more if needed)
Cream butter in an electric mixer until fluffy, then add vanilla. Slowly add in powdered sugar 1/2 cup at a time with the mixer on low speed. Add in melted white chocolate and beat until incorporated. To reach desired consistency, add in milk 1 teaspoon at a time with mixer on low speed. If frosting becomes too liquidy, simple add additional sugar.

and, girl, here is my most prized baking recipe– the most amazing chocolate chip cookies IN THE WORLD.
Ingredients
* 4 1/2 cups all-purpose flour
* 2 teaspoons baking soda
* 2 cups butter, softened
* 1 1/2 cups packed brown sugar
* 1/2 cup white sugar
* 2 (3.4 ounce) packages instant vanilla pudding mix
* 4 eggs
* 2 teaspoons vanilla extract
* 4 cups semisweet chocolate chips
* 2 cups chopped walnuts (optional)
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.
2. In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
3. Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.
With a last name that begins with "W" of course I love her "W 4×6 black and white" art! I'd love to win her work!

SAUCY CHICKEN AND PASTA DINNER
1/2 cup margarine
4 boneless, skinless chicken breast halves, cut into 1-inch pieces
1/2 tsp. garlic powder
1 can (4 ounces) mushrooms, undrained
1 cup frozen peas
4 cups (8 ounces) noodles, cooked & drained
1 cup shredded cheddar cheese
*Heat 1/4 cup margarine in large skilled. Add chicken & garlic powder; cook 4 minutes
*Stir in remaining 1/4 cup margarine, mushrooms and peas; cook 2 minutes or until chicken is cooked through.
*Stir in hot cooked noodles and cheese, mixing it all together until cheese is melted. Season to taste with salt and pepper.
Makes 6 servings!

Spincah Lasagna
Ingredients
•1 tsp. olive oil
•1 large onion, chopped
•1 can (28 oz.) whole, peeled tomatoes, chopped
•1 1/2 tsp. oregano
•1/2 tsp. salt
•1/2 tsp. garlic powder
•1/8 tsp. pepper
•9 lasagna noodles, uncooked
•1 pkg. (10 oz.) frozen chopped spinach, thawed, not drained
•8 oz. mozzarella cheese, shredded
Method
In medium pot heat oil over medium-high heat. Add onion; cook, stirring, until tender, 8-10 minutes. Add tomatoes, oregano, salt, garlic powder, pepper and 1 cup water; bring to a boil. Reduce heat to low and simmer, uncovered, 30 minutes. Preheat oven to 350 degrees F. In bottom of 13'x9' baking dish spread 1 cup sauce. Arrange 3 noodles on top of sauce. Lay 1/3 of spinach on top of noodles. Sprinkle 1/3 of cheese on top of spinach. Repeat twice. Pour any remaining sauce over top. Cover with foil and bake 45 minutes. Remove foil; baked uncovered, 15 minutes. Remove from oven; let stand 15 minutes to set.

I love the "LOVE" photo collage with the quote by Mother Teresa- we all have so much to learn from her! A woman who exemplified love and found it in the slums of Calcutta. Like Mother Teresa the Letter Chef finds love in the most unexpected places in this photo collage. For those of us who are in love, it is the day to day moments where love can most often be overlooked but also where it can be found most.
And now, a recipe!
"Easy summer pasta"
(I almost always double this recipe because I like a lot of sauce with my pasta)
2 14.5oz canned chopped tomatoes
1/4 C extra virgin olive oil
2/3 cup chopped onion
2/3 cup chopped carrrot
2/3 cup chopped celery
salt
pasta
fresh basil and parmesan optional
-In a saucepan, pit in the oil and chopped onion, turn on the heat to medium; saute until onion is a very pale gold.
-Add the carrot and celery and cook at lively heat for another minute, stirring to coat the veggiees well.
-Add the tomatoes, a large pinch of salt, stir thoroughly and adjust heat to cook in the uncovered pan at a gentle and steady simmer for 30-45 min until the veggies are soft.(Stir frequently.)
Taste and correct for salt.
Pour on cooked pasta and mangia, mangia!
(May also be frozen when done.)
Serving suggestion: serve with a side salad of arugula, artichoke hearts, lemon juice, olive oil, and parmesan shavings for a light and refreshing summer meal!
